Equipment

  • 1 ½ - 2 qt. baking dish

Ingredients
  

  • 16 oz. frozen spinach thawed and well-drained
  • 1 c. pepper jack cheese shredded
  • 1 c. monterey jack cheese shredded
  • 8 oz. cream cheese room temperature
  • 4 eggs beaten
  • ½ c. butter melted (extra for greasing the dish)
  • 2 tsp. minced garlic
  • 1 tsp. onion powder
  • 1 tsp. red pepper flakes
  • ½ tsp. salt
  • ½ tsp. black pepper

Instructions
 

  • Microwave frozen spinach, according to instructions on package, until thawed. Drain/squeeze the spinach until all excess liquid is removed.
  • Grease a 1 ½-2 qt. baking dish with butter. In a bowl, combine all ingredients until evenly-mixed. Pour into greased baking dish.
  • Bake for 35 minutes or until lightly browned and bubbly. Serve and enjoy!

Notes

Make sure that your spinach is well-drained; if not, the souffle will have unwanted liquid content.
Allow cream cheese to reach room temperature prior to mixing. It makes mixing so much easier!
Season with additional salt and pepper according to your taste preferences.
