Hey, y'all! Meal prep can be a daunting task -- but, there's one tried and true method that makes it doable for even the busiest of schedules: using the sheet pan method! Accordingly, I'm excited to share my recipe for Sheet Pan BBQ Chicken and Vegetables with y'all today. It's easy to make and delicious all week long!

The Sheet Pan Method
This method is my favorite because, well, it only involves one sheet pan! That makes cleanup as easy as possible, y'all. On a weekend, in preparation for a busy forthcoming week, I think we can all appreciate less time spent in the kitchen.

FAQ
Traditionally, no -- but, I have a trick: use thinly-sliced chicken and dice/chop the vegetables into small pieces (especially the sweet potatoes). This will make the cook time so much faster + uniform!
Use your favorite high-quality BBQ sauce; I most often use Sweet Baby Ray’s!
Choose your choice of breast or thighs. I most often use thinly-sliced, boneless, skinless chicken breasts.
Chicken should reach an internal temperature of 165F. I recommend always using a meat thermometer!

Sheet Pan BBQ Chicken and Vegetables
Ingredients
- 4 chicken breasts thinly-sliced
- 1.25 c BBQ Sauce of choice of choice
- 3 c sweet potatoes diced small
- 3 c broccoli florets small to medium size
- Dan-O's Seasoning liberally, to taste
- kosher salt to taste
- black pepper to taste
- garlic powder to taste
- olive oil
Instructions
- Preheat oven to 425F.
- In a large bowl, coat chicken breasts with BBQ Sauce and Dan-O's. Mix until evenly coated.
- Toss sweet potatoes + broccoli in olive oil. Season with kosher salt, black pepper, and garlic powder to taste.
- Arrange chicken + vegetables onto a sheet pan in a single layer (chicken on one side, all of the broccoli together, and all of the sweet potatoes together).
- Bake for 18-20 minutes, or until the internal temperature of the chicken reaches 165F and the vegetables are fork tender. Baste chicken with more BBQ Sauce + Dan-O's mixture + flip vegetables half-way through baking.
