Hey, y’all! Brunch. Y'all love brunch, I love brunch. We all love brunch. However, in the midst of the era we are living in, brunch out at local restaurants is not a feasible option. While sad, I implore that it's also an opportunity to make delicious, restaurant-quality brunches at home with our loved ones. A fantastic addition to your at-home brunch menu? My Southern Egg + Country Ham Brunch Puffs, which are crafted with the highest-quality eggs on the market: Happy Egg.

The Recipe

This recipe is savory, flavorful, and so very simple. Just heed my warning: you'll be addicted to these & they will turn into a family-favorite.

JC's note: Don't skip the dijon mustard! As with many of my recipes, I use this to amplify the flavor. You don't have to love mustard to incorporate this trick; try it and you'll be a convert!

Egg + Country Ham Brunch Puffs

Ingredients
  

  • 1 Sheet Puff Pastry
  • 12 Happy Egg Blue + Brown Heritage Breed Free Range Eggs™
  • ½ c. Swiss Cheese
  • 1-2 Slices Country Ham diced
  • Dijon Mustard
  • Black Pepper to taste
  • Kosher Salt to taste
  • Non-stick Cooking Spray
  • Green onions garnish

Instructions
 

  • Preheat oven to 375 degrees.
  • Roll out puff pastry dough to make it a little thinner.
  • Using a pizza cutter, cut the dough into twelve equal pieces.
  • Spray a muffin tin liberally with non-stick cooking spray + place a piece of puff pastry into each section. Press it firmly down into the sides + bottom; the puff pastry should ever-so-slightly overhang the top of each muffin tin.
  • Coat each piece of puff pastry with a good-quality dijon mustard.
  • Sprinkle shredded Swiss cheese into each muffin tin, crack one Happy Egg Blue + Brown Heritage Breed Free Range Eggs™ per cup, and top with finely-sliced country ham.
  • Bake for 13-15 minutes, just until the egg has fully set. Top with black pepper, salt (be conservative as the country ham has a high salt content), and garnish with green onions.
  • Serve & enjoy!
