As you are watching NCAA games from home this year, I wanted to provide a super simple + delicious recipe to enjoy during the big game. Welcome to the stage: my Bacon Pimento Cheese Croissants! So southern, delicious, and I know y’all are going to love them!

Pimento Cheese

  • 3/4 c. Monterey Jack grated
  • 3/4 c. Sharp Cheddar grated
  • 1/2 c. Parmesan shredded
  • 1/2 c. Mayonnaise
  • 4 oz. Cream Cheese
  • 4 tbsp. Diced Pimentos
  • 1 tbsp. Minced Onion
  • 3 tsp. Grated Onion
  • Garlic Powder to taste
  • Kosher Salt to taste
  • Black Pepper to taste

For The Croissant Sandwiches

  • Mini croissants halved
  • Romaine Lettuce
  • Bacon cooked to desired doneness
  • Hot Pepper Bacon Jam I buy the Private Selection brand from Kroger


Pimento Cheese

  • In a large bowl, combine all ingredients. You can incorporate by hand or with using a stand mixer, my preferred method.
  • Add more kosher salt or black pepper to your desired taste.


  • Cook bacon to desired level of doneness.
  • Using a serrated knife, slice croissants in half.
  • Liberally spread pimento cheese on the bottom half of the croissant and top with bacon, lettuce, and jam.
  • Add the top croissant to the slider and secure with a toothpick.
