Hey, y'all! As many of you know, I split my time between Southern Kentucky (Russell County) and Louisville. I travel between both homes weekly; as such, I find myself on the road far more often than the average Kentuckian. Road trips require 1) gasoline and 2) pitstops -- which is why I was thrilled to find out that RaceTrac was opening a store in Kentucky! Conveniently located near the interstate, RaceTrac (Elizabethtown, Kentucky) is my new go-to; keep reading and you'll see why it's easily the best gas station in the region!

This post is in partnership with RaceTrac. Thank y'all for supporting those that make JCP Eats possible. All opinions expressed, as always, are my own.

What To Expect
Breakfast
On my early morning commute down to Russell County, I popped into RaceTrac to try their breakfast -- the most important meal of the day - right, y'all? While I expected a great variety, I had no idea it would be as delicious as it was!
One of the highlights was the breakfast pizza. Yes, you read that correct. Gravy as a the sauce + topped with eggs + a plethora of cheese. It was sinfully delicious!

Also on the breakfast menu are ready-made, grab-and-go sandwiches; I loved the sausage, egg, and cheese biscuit!

However, the true star of the show was the sausage, egg, and cheese waffle sandwich (limited time offer). I've craved it each day since I last had it!

The Space
On the inside, RaceTrac was one of the most gorgeous gas stations that I've seen in Kentucky -- and it was certainly the cleanest.

There was dine-in seating, as well as ample outdoor seating.

Food Highlights
Apart from breakfast, there were many other food items that caught my eye (and my appetite).

In true southern fashion, there were boiled peanuts. Kentucky is just northern enough to make boiled peanuts rare, but I absolutely love them -- and I am so excited to have a consistent source in RaceTrac! They have both classic + cajun and I highly recommend the cajun.

Love ice cream? Try one of their many frozen yogurts + visit their toppings bar. It was huge -- unlike anything that I've ever seen in a gas station!

I also loved their coffee -- it was hot, fresh, and there were over a dozen varieties.
