The Perfect Easter 2021 Menu With Ale-8-One

Hey, y’all! Easter is quickly approaching and it’s one of my very favorite holidays! Easter dinner is a large occasion in many families, my own included. As such, I wanted to put together the perfect at-home menu for you to enjoy the day with your loved ones. In partnership with my friends at Ale-8-One, I’m proud to present: the Perfect 2021 Easter Dinner Menu! All recipes are easy-to-make, are chock-full of flavor, and will become a part of your annual family celebrations. I hope y’all enjoy!

Ale-8-One Zero

Did y’all know that Ale-8-One recently released Ale-8 Zero Sugar? Ale-8 Zero Sugar is a low-calorie alternative with the same great taste as the original soda. The new-to-the-market Ale-8 Zero Sugar is a rebrand of Diet Ale-8, as it features the same recipe in a new, redesigned look. While it has zero sugar, zero calories, and zero aspartameit’s still 100% Kentucky.

The menu that you will find below pairs perfectly with Ale-8 Zero Sugar, as it is incorporated into all of the recipes. That said, you can absolutely use classic Ale-8-One in all of these recipes, too!

The Perfect 2021 Easter Dinner Menu: Pineapple Skillet-Fried Ham

Pineapple Skillet-Fried Ham

Pineapple Skillet-Fried Ham

Ingredients:

8 slices of ham, thick-sliced (support local if you can!)

20 oz. crushed pineapple (separate pineapple from juice, both are used individually)

1/2 c. reduced sodium soy sauce

1/2 c. Ale-8-One

1/4 c. brown sugar

2 tbsp. dijon mustard

Butter, for frying

Directions:

  1. In a large mixing bowl, combine pineapple juice, soy sauce, Ale-8-One, brown sugar, and dijon mustard.
  2. Submerge slices of ham in the mixture and allow it to marinate for a minimum of 1-2 hours in the refrigerator.
  3. Remove slices of ham from the marinade and place into a skillet with butter over medium heat.
  4. Cook on each side until browned, roughly 3-4 minutes.
  5. After all ham is cooked and has been removed from the skillet, place 1 can of pineapple chunks in the skillet and allow them ever-so-slightly brown (3-5 minutes).
  6. Serve ham topped with pineapple; enjoy!

Easy Herbed Couscous Salad

Ingredients:

1 c. couscous (I like all three of the main varieties of couscous: Moroccan, Israeli, and Lebanese)

1.25 good-quality chicken broth

.25 c. Ale-8-One

2 lemons, juiced (more for garnish if you like)

3 tbsp. parsley, chopped (more for garnish if you like)

Kosher salt, to taste

Black pepper, to taste

Garlic powder, to taste

Onion powder, to taste

Red pepper flakes, a pinch

Directions:

  1. Rinse couscous.
  2. Add Ale-8-One and chicken broth to a saucepan; over medium to medium-high heat, bring it to a boil.
  3. To the boiling liquids, add in couscous and cover with a lid.
  4. Remove from heat and do not remove lid for 10-15 minutes.
  5. Fluff couscous with a fork and stir in lemon juice, kosher salt, black pepper, garlic powder, onion powder, and red pepper flakes.
  6. Top with additional parsley and garnish with lemon. Serve and enjoy!

Ginger Rosemary Roasted Potatoes

Ingredients:

1.5 lbs of petite roasting potatoes (I opt for multi-color)

Extra Virgin Olive Oil, for roasting (roughly 2 tbsp)

4 tbsp. Ale-8-One

1 tbsp black pepper, add more to taste

1 tsp. kosher salt, add more to taste

1.5 tbsp. minced garlic

1 tbsp. minced onion

2 tbsp. rosemary + sprigs for garnish

Directions:

  1. Preheat oven to 400F.
  2. Wash your potatoes; if petite, simply cut each in half.
  3. Add potatoes to a glass mixing bowl and top with evoo, Ale-8, black pepper, kosher salt, minced garlic, minced onion, and rosemary. Mix with hands until potatoes are well-coated.
  4. Roast until fork-tender, roughly 35-45 minutes. Stir occasionally.
  5. Garnish with more fresh rosemary + serve!

The Perfect 2021 Easter Dinner Menu: Ginger Roasted Parsnips

Pan-Roasted Ginger Parsnips

Ginger Roasted Parsnips

Ingredients:

2 lbs parsnips (I personally don’t peel them; I simply cut off the ends and chop. That said, you can absolutely peel them!)

3 tbsp. Ale-8-One

2 tsp. dried oregano

2 tbsp. extra virgin olive oil

Hot Honey, for drizzling

Kosher salt, to taste

Garlic powder, to taste

Black pepper, to taste

Red pepper flakes, to taste

Directions:

  1. Preheat oven to 425F.
  2. Cut off the ends of the parsnips and chop. Place in a large mixing bowl.
  3. To the bowl, add Ale-8-One, oregano, extra virgin olive oil, kosher salt, garlic powder, red pepper flakes, and black pepper. Mix well with your hands, allowing the parsnips to evenly coat with seasonings.
  4. Add seasoned parsnips to a baking sheet and roast for 30-35 minutes. Toss halfway through cooking.
  5. Remove from oven + drizzle with hot honey.
  6. Serve warm and enjoy!

About Ale-8-One

Launched in July of 1926, Ale-8-One is the only Kentucky-invented soft drink still in existence. It was invented by G. L. Wainscott and was named via one of America’s first slogan contests at the Clark County Fair. “A Late One” – the winning entry – was a pun adopted for its witty description. From that, a Kentucky legacy transpired.
