Hey, y’all! I’m coming to you this weekend with one final recipe – and it’s another side dish! My ginger roasted parsnips are one of the easiest recipes that you’ll find on the blog. Many of y’all might be unfamiliar with parsnips, as they are a grossly underrated vegetable; that said, they’re simply a root vegetable very similar to carrots (but with more flavor)! You can widely find them in your local supermarkets — try them once and, like me, you’ll be hooked!

JC’s note: anytime I want to put ginger in a recipe, I choose to use local Kentucky favorite Ale-8-One. While it’s fabulous to drink, it’s equally fabulous to cook with! You can interchangeably use Ale-8-One or Ale-8 Zero Sugar in the recipe. It’s purely your preference!

About Ale-8: Launched in July of 1926, Ale-8-One is the only Kentucky-invented soft drink still in existence. It was invented by G. L. Wainscott and was named via one of America’s first slogan contests at the Clark County Fair. “A Late One” – the winning entry – was a pun adopted for its witty description. From that, a Kentucky legacy transpired.

Ginger Roasted Parsnips

Ingredients:

2 lbs parsnips (I personally don’t peel them; I simply cut off the ends and chop. That said, you can absolutely peel them!)

3 tbsp. Ale-8-One

2 tsp. dried oregano

2 tbsp. extra virgin olive oil

Hot Honey, for drizzling

Kosher salt, to taste

Garlic powder, to taste

Black pepper, to taste

Red pepper flakes, to taste

Directions:

  1. Preheat oven to 425F.
  2. Cut off the ends of the parsnips and chop. Place in a large mixing bowl.
  3. To the bowl, add Ale-8-One, oregano, extra virgin olive oil, kosher salt, garlic powder, red pepper flakes, and black pepper. Mix well with your hands, allowing the parsnips to evenly coat with seasonings.
  4. Add seasoned parsnips to a baking sheet and roast for 30-35 minutes. Toss halfway through cooking.
  5. Remove from oven + drizzle with hot honey.
  6. Serve warm and enjoy!
