Hey, y’all – Happy Day 15 of Blogmas! Blogmas is a series that I am bringing to the blog this year (and hopefully in subsequent years) that will provide y’all with a new recipe every day of December through Christmas. How fun is that? Today I’m excited to be sharing my take on a holiday favorite: pimento cheese sausage balls.

If you’re like me, you love sausage balls — but, I often find that they are dry. Not these, y’all. You’re going to love them!

FAQ

Can you make the sausage balls in advance and freeze them?

Absolutely! Just allow them to approximately reach room temperature prior to cooking; if not, cooking time will need to be adjusted.

What brand of pimento cheese should I use?

I’ll say this: use your favorite store-bought pimento cheese to make this recipe extra easy. My favorite pimento cheese that is readily available is Palmetto; that said, if you in an area with a Harris Teeter, I love Robert’s Pimento Cheese. Many supermarkets also carry locally-made pimento cheeses and I always recommend supporting local.

Should I use hot or mild sausage?

I think hot sausage has more flavor personally; that said, if you prefer it not as spicy, use mild.

Yes! You can find my pimento cheese recipe here. My recipe features mayonnaise, cream cheese, monterey jack, sharp cheddar, and parmesan.

The ultimate sausage ball recipe = my Pimento Cheese Sausage Balls. Easy to make – and most importantly: they aren't dry!

Ingredients
  

  • 1 lb. pork sausage I prefer to use hot sausage, but you can use mild if you’d like
  • 12 oz. pimento cheese I use Palmetto
  • 1.5 c. Bisquick
  • 1 block cream cheese
  • 10 dashes hot sauce I recommend Cholula
  • 1.5 tbsp. minced onion

Instructions
 

  • Preheat oven to 400F.
  • In a stand mixer, mix all ingredients together until uniformly combined.
  • Line a baking sheet with parchment paper and form the sausage mixture into balls of the same size. I think it’s best to use a small ice cream scoop to ensure consistency (and it’s easier!).
  • Bake for 20 minutes or until the sausage balls have reached your desired level of brownness.
  • Enjoy!
