Hey, y’all – Happy Day 14 of Blogmas! Blogmas is a series that I am bringing to the blog this year (and hopefully in subsequent years) that will provide y’all with a new recipe every day of December through Christmas. How fun is that? Today I’m excited to be sharing a side dish for your holiday meal at home: roasted asparagus with hollandaise sauce. This pairs perfectly with beef!

Gone are the days of hollandaise being a delicacy you only order at a high-end restaurant — I’m going to show y’all how easy it is to make! The best part? I add a little Kentucky flavor to my hollandaise with a splash of Ale-8-One.

What is Hollandaise Sauce?

Hollandaise sauce is an emulsion of egg yolk, melted butter, and lemon juice. It is often seasoned with salt, pepper, and/or cayenne pepper. Known as one of the five mother sauces in French cuisine, hollandaise is rich, flavorful, and oh-so-good.

Roasted Asparagus With Hollandaise Sauce

Ingredients – Asparagus:

1 lb. asparagus, trimmed

Kosher salt, to taste

Garlic powder, to taste

Black pepper, to taste

EVOO

Ingredients – Hollandaise:

1 large egg yolk

1.5 tsp. lemon juice

4 tbsp butter (1/2 stick), unsalted, melted

1 tsp. Ale-8-One

Cayenne Pepper, 1 pinch

1/2 tsp. kosher salt

1/2 tsp. black pepper

Directions:

  1. Preheat oven to 450F.
  2. Trim the asparagus and cover in olive oil. Season well with kosher salt, garlic powder, and black pepper.
  3. Roast asparagus until slightly brown and fork tender, roughly 10-15 minutes (depending on how thick your asparagus is). Pro tip: shake the pan halfway through to evenly cook.
  4. In a blender, add in egg yolk, lemon juice, Ale-8, cayenne, kosher salt, and black pepper. Pulse just until combined, roughly 3-4 times.
  5. With the blender on, slowly add in the butter, which should be melted and piping hot.
  6. Mix until the sauce is smooth, which takes 15-30 seconds.
  7. Serve on the side (or on top) of roasted asparagus.
  8. Enjoy!

Launched in July of 1926, Ale-8-One is the only Kentucky-invented soft drink still in existence. It was invented by G. L. Wainscott and was named via one of America’s first slogan contests at the Clark County Fair. “A Late One” – the winning entry – was a pun adopted for its witty description. From that, a Kentucky legacy transpired.
