Hey, y’all – Happy Day 12 of Blogmas! Blogmas is a series that I am bringing to the blog this year (and hopefully in subsequent years) that will provide y’all with a new recipe every day of December through Christmas. How fun is that? Today I’m excited to be sharing my recipe for a classic homestyle meal: the best southern meatloaf!

The Best Southern Meatloaf

The Best Southern Meatloaf

Ingredients – The Best Southern Meatloaf:

1 lb. ground beef (I recommend using 90-10)

1 c. bread crumbs (I prefer Progresso)

2 vidalia onions, chopped

1/2 c. chicken stock

1 large egg, beaten

1 tbsp. Worcestershire

.75 tbsp. thyme, dried

1 tbsp. parsley, dried

1.5 tsp. kosher salt

1.5 tsp. black pepper

1 tbsp. tomato paste

Ketchup, to taste

Directions – The Best Southern Meatloaf:

  1. Preheat oven to 350F.
  2. In a bowl, mix together the beef, bread crumbs, onions, chicken stock, egg, Worcestershire, thyme, parsley, salt, pepper, and tomato paste until well-combined.
  3. Line a loaf pan with parchment paper and mold the meatloaf mixture into a loaf shape.
  4. Cover the top liberally with ketchup.
  5. Bake uncovered for 65-75 minutes (or until the internal temperature reaches 160F).
  6. Allow to cool for 5-10 minutes, slice and serve warm.
  7. Enjoy!
