Hey, y’all!
As far as I am concerned, pimento cheese is the soul of the south. When it’s good, there’s nothing that I love more; when it’s sub-par (or even mediocre), it offends me to my core… as it should any southerner!
That’s why I am sharing my recipe with y’all. You’ll never make it another away. Just don’t tell your MeeMaw. Why?
… it’s better than the batch that she makes!
Better Than MeeMaw's Pimento Cheese
Ingredients:
1 c. Monterey Jack, grated
1 c. Sharp Cheddar, grated
1/2 c. Mayonnaise
4 oz. Cream Cheese
4 tbsp. Diced Pimentos
1 tbsp. Minced Onion
3 tsp. Grated Onion
Garlic Powder, to taste
Kosher Salt, to taste
Black Pepper, to taste
Directions:
- In a large bowl, combine all ingredients. Using either a wooden spoon (my preferred method) or a hand mixer, mix until well-incorporated.
- Add more kosher salt or black pepper to your desired taste.
- Serve on a croissant or artisan bread with lettuce.
- Enjoy – it’s as easy as that!
It doesn’t get much simpler – or delicious – y’all!
