Louisvillians – rejoice! We have a Vinaigrette in our wonderful city! This Lexington-based salad restaurant serves Wildcat Country in four locations (Hamburg, Townley Center, Downtown, and Palomar Centre); however, they also opened shop off of Hurstbourne here in the ‘ville!
Vinaigrette hones in on specialized salads, soups, and delicious lemonades. I was tickled pink when the office asked me to come try all three! The manager was a delight to work with and eventually persuaded me to try their chicken salad. Now, let me confess — I have high standards for chicken salad. Very high. But, to the relief of all, their’s did not disappoint. In fact, I thought it was quite delicious – light and refreshing.
The Classic Chicken Salad consists of chicken, crisp apples, dried cranberries, & Kight’s pecans mixed with Mayonnaise and tarragon. This is served atop a spring mix and strawberries. Pro tip: get a side of balsamic vinaigrette – so, so good.
I visited on a cold, cold day – which made this bean, sausage, and kale soup a little more delectable than it already was.
